ABSTRACT

This study aimed al determining some physicochemical properties of some fruit juice sold in Umuahia metropolis, Abia State. The nitrite, nitrate, n-nitrosaminc, as well as their by-product of metabolism, malondialdehyde (a deleterious by-product of lipid peroxidation) and the pH content of seven (7) branded fruit juice samples were determined using chemicalmethods. Malondialdehyde and nitrite were estimated spectrophotometrically, nitrate after reduction to nitrite with cadmium column and N-nitrosamines after decomposition to nitrite using U.V irradiation, while pH was determined using pH-meter. The results show that nitrite ranged from 0.13 — 1.10 pg/ml, nitrate was -0.28 — 1.10 pg/ml while n-nitrosaminc was - 0.08 --0.39 pg/ml. Also, MDA value has range of 0.82 - 3.74 pg/ml while the pH range was 2.80 — 3.30. From these results, it can be safe to say that the fruit juice are relatively safe even though chronic consumption should be discourage.
