Chemical Composition Of Mucuna Cochinchinensis Seeds Soaked In Different Alkaline Solutions

ABSTRACT
This study was conducted to evaluate the effect of soaking of Mucuna cochinchinensis in different alkaline solutions on the proximate composition, mineral profile and level of anti-nutritional factors. The treatments included potash (Ti), palm bunch ash (T2), maize cob ash (T3) and yam bean ash (T4) solutions, while the raw seeds was the control. The results indicated that yam bean ash solution improved crude protein content better than the other treatments. The mineral profiles were generally improved by the soaking in alkaline solutions. Soaking in potash solution best reduced the anti-nutritional factors.
