ABSTRACT
The Longmans Dictionary of Contemporary English (1995) defines food as “Things that people and animals eat such as vegetables or meat" and I add “and their products thereof’. Food is one ofthe basic needs ofman and indeed ofall living organisms. Although people may eat for various reasons, the major functions offood include:- ■ Provision of vital nutrients (carbohydrate, protein, fats and oil, minerals, fibre, and evenwater). • Energy source. • Growth and body maintenance. • Provision ofenjoyment, satisfaction, fun, etc. The food must be provided in sufficient quantity and quality for it to sustain acceptable level oflife. For food to be able to fulfill its functions, it must be adequately handled through processing, preservation, packaging and storage. Nigeria is endowed with several indigenous and exotic foods to improve the nutritional status of her people if adequately harnessed. Okafor (1981) reported that there are over 200 indigenous woody plants whose leaves, flowers, fruits, and seeds are of nutritional importance. Unfortunately, many of the food crops grow wild while the domesticated species are notfully utilized.
